Fascinated at an early age with cooking, Chef John "JB" Pollard was always under his grandmother's feet in the kitchen. His grandmother suggested that he try his hand at his uncle's restaurant as a dishwasher at the age of 12. That began his life long obsession with cooking. After culinary school, Chef Pollard was given the opportunity to apprentice with some of the greatest chefs in Jamaica and Mexico.
